How To Make Chinese Fried Rice

Let’s see the history of Chinese fried rice. It is believed that “Chinese Emperor Sui Yang” introduced his favorite dish “broken golden rice” (egg fried rice) to Yangzhou when traveling around Jiangdu (present-day Yangzhou is a city in China’s Jiangsu province). Some researchers believe that this fried rice initially came from the hands of traditional people.

According to the historical records available to us, people who were sailing boats on the Hangzhou Ancient Canal started to eat fried rice with eggs during the spring and autumn seasons.  There is one more story in Yangzhou in the old days if there were leftovers from lunch, they used that portion during the preparation of dinner. They beat one or two eggs, add condiments (some herbs or make a type of sauce) such as chopped green onions, and stir-fry with the leftovers to make egg-fried rice.

During the Ming Dynasty, the Yangzhou traditional chefs added other ingredients to fried rice, following the pattern of Yangzhou fried rice.

Later, During the Jiaqing period of the Qing Dynasty, Yangzhou Taishou Yi Bingshou began to add lean meat (diced), ham, chicken, etc. Based on timed fried rice with fried eggs and scallion (spring onion), it gradually progressed into an assortment of egg fried rice according to region, which tasted more delicious.

Subsequently, the Chinese people who went to do business overseas to earn a living, particularly Yangzhou chefs, spread Yangzhou fried rice recipes to all corners of the world. Now, you will find different varieties of Chinese fried rice with local fusion.

Ingredients:

Basmati rice 2 cups

2 eggs,

10 grams spring onion

1 medium onion chopped

Garlic chopped 1 tbsp

Carrot diced 1 cup

Capsicum diced 1 cup

Green beans 10 grams

Egg 2 medium size

Cooking oil 6 tbsp

Salt to taste

Soya sauce 2 tbsp

Boiled green peas 1 cup

Preparation Method:

Wash the chicken, cut it into small pieces and keep aside.

Put the oil in a hot pan and add chopped onion, garlic, carrot, spring onion, and salt to taste.

Add soya sauce and add boiled green peas to the pan.

Mix it well and statue and remove it from the pan and set aside.

Add 3 tablespoons of oil to the empty pan to sauté the chicken cubes.

When the oil is heated, add the chicken and stir fry until it changes color and becomes white. Fry it until the chicken is tendered.

Now, add soya sauce and ground black pepper.

Take a bowl and beat 2 eggs in it.

Take another pan and place 1 tablespoon of oil and place it on low-medium heat.

Add the beaten eggs and cook them well.

During this time take another cooking pan and boil the rice and keep it aside.

Now, take the already boiled rice cooking pan and add the fried chicken cubes.

Include all the fried vegetables in it.

Add the ready egg (omelet crushed into small pieces)

Include 1 tablespoon of soya sauce on it.

Combine all the materials well.

The Chinese Fried Rice or Chicken Fried Rice is ready, serve with favorite curry (optional).
