Ingredients:
2 tablespoons olive oil
1 large onion, diced
1 red bell pepper, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon ground paprika
1/2 teaspoon ground coriander
1/4 teaspoon chili powder (optional)
1 large can (28 ounces) crushed tomatoes
Salt and pepper to taste
6 large eggs
Fresh cilantro or parsley, chopped (for garnish)
Crumbled feta cheese (optional)

Preparation Method:
Heat the Oil: In a large frying pan, heat the olive or cooking oil over medium heat. Add the diced onion and cook until it’s soft and translucent about 5 minutes.
Add Vegetables and Spices: Add the sliced red bell pepper and cook for an additional 5 minutes until it becomes soft. Stir in the minced garlic, cumin, paprika, coriander, and chili powder. Cook for 1-2 minutes until fragrant.
Add Tomatoes: Pour in the crushed tomatoes, season with salt and pepper and bring to a simmer. Let it cook for about 12-15 minutes, stirring occasionally until the sauce thickens.
Create Holes for the Eggs: Use a spoon and make small holes in the sauce and softly crack an egg into each hole. Cover the frying pan and cook until the eggs are set to your desired liking. It may be about 5-7 minutes for soft yolks.
Serve with Garnishing: Remove the frying pan from the heat. Sprinkle with chopped cilantro or parsley and crumbled feta cheese, if using. You need to serve hot with crispy bread or pita bread.
