Preparation Method:
Preheat Oven: Preheat oven to 350°F (175°C).
Make the Egg Mixture: Take a large bowl, whisk the eggs, milk or cream, salt, and pepper until they are well combined.
Sauté the Vegetables: Heat the olive oil in an oven-safe skillet over medium heat. Add sliced red onion and cook until it is soft and translucent for about 5 minutes. Include the baby spinach leaves and cook until wilted for about 2 minutes.
Add the Tomatoes and Salmon: Stir in the cherry tomatoes and smoked salmon pieces, distributing them evenly throughout the skillet.
Egg Mixture Addition: Add the mixture of eggs over the salmon and vegetables in the cooking pot. Gently shake the skillet to ensure the eggs are evenly distributed.
Top up with Cheese: Sprinkle the feta cheese or crushed goat cheese over top of the frittata.
Cook the Salmon Frittata: Transfer the cooking pan to the preheated oven. Bake for about 20-25 minutes or until your salmon frittata turns out to be set in the middle and becomes lightly golden on top.
Serve with Garnishing: Remove the salmon frittata from the oven and let make it cool slightly before slicing. Garnish with fresh chopped dill and serve warm or at room temperature.
Enjoy your Smoked Salmon Frittata! It’s a dish that’s both simple to prepare and sophisticated in flavor, perfect for any occasion.
