Preparation Method:
Rinse the chicken and dry. Combine all the spices and rub the mixture on all side of the chicken. Cut through the chicken legs at the joint and divide into 2 halves if you are cooking as pieces.
Heat the oil in pan and brown the chicken pieces on all sides. Add salt according to taste. Peel the onions and cut into wedges and add to the pan. Fry for a moment, then include the stock, reserving 3-4 tablespoon. Add the whole garlic cloves in the pan, then add just enough water to cover the chicken or chicken pieces. Wash the leeks and cut the leeks into small pieces and add to the pan.
Mix the chocolate and chili smoothly with the remaining chicken stock and add in the pan. Simmer gently for about 20 minutes.
Meanwhile, wash and cut the pepper into bite-sized pieces. Add to the chicken stew 5 minutes before the end of cooking time. Thicken with little cornflour if necessary and add honey and nutmeg to taste.
Serve Chili Chocolate Chicken hot.
Cook’s Tip:
Cooking chocolate can be tricky since chocolate tends to burn easily on high heat. To avoid mishaps, make sure to use a sturdy stainless steel pan.
