Chicken Spiedini Recipe
Ingredients:
Boneless chicken breast, cubed, 4
Olive oil, 1 tbsp
Lemon juice, ½ cup
Lemon zest, grated, 3 tbsp
White breadcrumbs, 2/3 cup
Garlic cloves, crushed, 2
pepperoncini, chopped, 2 tbsp
Parmesan cheese, grated, 1/3 cup
Parsley, chopped, 1 tbsp
Chicken Spiedini Recipe
Preparation Method:
Combine 3 tbsp lemon juice, 1 tbsp lemon zest, and olive oil and blend thoroughly. Keep the mix in a bowl or a zip-lock bag and add chicken cubes to it. Leave the chicken to marinate for about 30-40 minutes.
In a separate bowl, mix pepperoncini with lemon juice and set aside.
Place Parmesan cheese, breadcrumbs, parsley, garlic and remaining lemon zest in a shallow dish and mix well.
Remove chicken cubes from the marinade and place them in the crumb mixture and combine well. Now thread all the chicken cubes on metal skewers.
Grill chicken for 10-12 minutes or until cooked through, turning occasionally.
Place chicken spiedini on the serving platter and serve with green salad or other side dishes.
