Crispy Chicken Tender Recipe

Have you ever tried to make crispy chicken tender recipe? If not, here is yummy and crispy chicken tender recipe that is usually served with pineapple tropical sauce. The bite size coconut containing tenders are delicious in taste and good for health due to gluten-free and low carb nature. Whether the members of your family are diet conscious or picky eaters, this recipe has potential to win their heart.

Most of the chicken tender recipes demand breadcrumbs (having gluten) to coat the chicken pieces. Luckily, this recipe has swapped the breadcrumbs and added shredded unsweetened coconut to make highly crispy tender without any side effects. There is an easy to make pineapple sauce to develop savory and sweet taste.

In order to make the yummy tenders, place chicken strips in coconut cayenne seasoned flour and dip in eggs. If you do not want to add coconut flour, try to use tapioca flour. Later on, coat the tenders with the shredded coconut. Do not forget to sprinkle coconut oil on the strips just to give golden brown texture. Use a greased baking sheet to bake the soft but crispy chicken tender.

Preparation Time – half an hour

Cooking Time – 15 minutes

Cooking Tools:

  • Electric Blender
  • Skillet
  • Baking Sheet
  • Three Dishes
  • Coconut flour – ½ cup
  • Chicken strips – one lb
  • Cayenne pepper – two tablespoons
  • Eggs – two
  • Salt – ½ t
  • Fresh chopped parsley
  • Coconut oil – three tablespoons
  • Frayed unsweetened coconut – two cups
  • Coconut oil – one teaspoon
  • Grated ginger – 1 t
  • Pineapple in cubed form – 2 cups
  • Coconut aminos – 1 t
  • Water – ½ cup
  • Minced garlic cloves – three
  • Cayenne powder to sprinkle after making sauce
  • Use preheated 400F oven to bake the chicken tenders.
  • Take a baking sheet and grease with coconut oil.
  • Wash the chicken strips and dry with paper towel.
  • Add salt, cayenne powder and coconut flour in a dish and mix well.
  • Take another dish to beat the eggs.
  • Use a shallow dish to pour the tattered coconut.
  • Now, coat the strips in the mixture of coconut flour. After that, dip in the eggs and then in shredded coconut.
  • Use baking sheet to place the chicken strips. There must be two inches gap between the two pieces. Use coconut oil over these strips.
  • It will take just 15 minutes to bake the crispy and golden brown tenders.
  • As far as the pineapple sauce is concerned, add garlic, ginger, coconut aminos, coconut oil, pineapple in large size skillet. Add water to boil the mixture on low flame. It will take a few minutes to cook all the ingredients. Now turn off the flame and keep aside the sauce so it cools down.
  • Blend the cool mixture to get thick sauce. Before serving crispy chicken tender dish, use chopped parsley to garnish the lip-smacking chicken tenders and serve with flavorful pineapple sauce having cayenne powder. If your family does not like spicy sauce, do not add the cayenne powder. Instead, you can use onion or garlic powder.
