Spiced Carrot Lentil Soup is a hearty and flavorful dish perfect for cozy nights. This delightful soup combines the sweetness of carrots with the earthiness of lentils, all brought together by a warm blend of spices. Ingredients:

Carrot, peeled and thickly grated, 4 large

Vegetable stock, 4 cups

Red lentil (masoor daal), 1 cup

Milk, 1 cup

Cumin seeds, 2 tsp

Red chili flakes, 1 tsp

Olive oil, 2 tbsp

Preparation Method:

In a frying pan, fry the cumin and chili flakes and remove and keep aside. In the same pan, add the lentils, carrots, stock, and milk and bring to a boil.

Simmer for 15 minutes or until the lentils are cooked through and soft. Cool it and blend it in a food processor until smooth.

Season with salt and pepper, reheat and serve sprinkled with the cumin seeds and chili flakes mixture. If you like, you can add a spoonful of yogurt on top of the Spiced Carrot Lentil Soup.
