Smoked Almond Snack Bars
Ingredients:
1 ½ cup smoked almond
½ cup pepita seeds; pumpkin seeds
¼ cup of sesame seeds puffed and casual millet
1 ½ tbsp chia seeds; optional
½ tsp smoked paprika
½ tsp onion or garlic powder
Less than ½ tsp salt
¼ cup of brown rice syrup
2 tbsp of honey
½ tsp of liquid smoke; optional
Smoked Almond Snack Bars
Preparation Method:
Preheat oven to 325 0F and take 8×8 inch baking pan. Coat the sides and bottom with cooking spray. Chop almonds into small pieces and put some almonds whole. Mix pepita seeds, almonds, paprika, salt, garlic powder and millet in a bowl.
Mix honey and brown rice syrup in a measuring cup and microwave just for 30 seconds. Stir in liquid smoke. Pour this syrup over the nut mixture and mix well until the ingredients are coated. Put this mixture in a baking pan along with a spatula.
Spray your hands with cooking spray and gently press nuts into the pan. Let it bake for up to 18-20 minutes until syrup is bubbling and toasty color at the sides of the pan. Let it cool until they turn into solid blocks, but a bit flexible. If bars are more solid, put them in the oven and let them become a bit pliable.
Put these cooled bars on a cutting surface. You may need to use the edge of a knife at the sides of the pan to remove the bars completely. Spray the knife with cooking spray and slice the whole brick into 10 equal bars. Keep the bars on the cutting board; don’t remove them. Let all the bars cool completely.
It is better to leave bars on the cutting surface for several consecutive hours before picking them. They will take longer to become firm. Use an airtight container to preserve these bars between parchment layers. Put bars in a refrigerator for 2 weeks and pack individually. You can preserve the bars for 3 months.

Recipe Notes:
1-Finding Smoked Almonds: You can find smoked almonds in some stores and a few farms. Usually, these almonds are available in food stores and at Whole Foods.
2-Using Plain Almonds: If you are using plain almonds, liquid smoke can be good. To toast them, heat the almonds for 15 minutes in an oven at 325 0F.
Troubleshooting:
1-Bars are falling and loose enough. Maybe you didn’t bake them quite long enough. You can pop them again in the oven and let them cool to room temperature. Then, shift the bars to the fridge for several hours to make them firm.
2-Bars are firm but a little sticky. Your bars got more heat, just a couple of minutes more than needed. Cut parchment into pieces and place at the bottom of the bars. Storing the bars in a fridge for a few hours can also improve their look and firmness.
3-Bars are harder like rocks. This is due to the longer baking time. You need to chop or cut them into bite-sized pieces and eat them with granola.
