Ingredients:
4 baby eggplants, sliced thinly
4x 112g pizza bases
3 medium zucchini, sliced thinly
½ cup sun-dried tomato paste
1 medium red capsicum, seeded, finely chopped
200 g halloumi cheese, sliced thinly
Roasted Vegetable Pizza Recipe
Preparation Method:
Cook eggplant and zucchini on the heated oiled barbecue until just tender.
Spread pizza bases with tomato paste, and top with eggplant, zucchini, capsicum, and cheese.
Cook in a covered barbecue, using indirect heat for about 10 minutes or until cooked through and the cheese melts.
Roasted Vegetable Pizza is ready to serve. Enjoy!
