Roasted Aubergine Dip
Ingredients:
- Aubergine – one medium size
- Olive oil – 120 ml
- Lemon – 1
- Peeled and crushed garlic – one clove
- Black pepper
- Salt
- Parsley, finely chopped to garnish

Preparation Method:
Use preheated (200C) oven in order to roast the Aubergine.
Take a baking sheet and place the Aubergine over it
It will take almost 35 minutes till the Aubergine gets tender.
