Fried Eggs with Lemon & Yogurt
Ingredients:
- ¼ cup of plain yogurt (60ml)
- ½ lemon
- Kosher salt
- Black pepper, freshly ground
- 2 tbsp of extra-virgin olive oil
- 2 eggs
- 1 tbsp of roughly chopped leafy fresh herbs like dill, basil, chives, parsley, and chervil.

Preparation Method:
Inside a small bowl, mix together half a squeeze of lemon juice and yogurt, (do not discard lemon half after squeezing out the juice) whisk the mixture together. Add pepper, salt, and lemon to taste. Transfer the mixture into a plate then, spread and swoop the mixture into yogurt covers the plate.
Inside nonstick skillet, put olive oil and warm over medium-high heat. Crack your eggs and spread inside the pan adding pepper and salt to taste. Sprinkle a teaspoon of water inside the skillet. Ensure the water touch the bottom of your pan without touching the eggs and, instantly, cover your pan carefully using a lid, you can equally use the bottom of any other wide pan that is lightweight.
Allow the eggs to cook till the albumen is cooked through while the yolks remain a bit wobbly. Pour the eggs into an already prepared plate and set the plate on the yogurt. Spread leftover olive oil on top.
Squeeze in the remaining lemon and scatter the herbs on top.
Serve Fried Eggs with Lemon & Yogurt immediately.
