Make Chicken Croquettes
This breadcrumbed fried food roll recipe comes from Rebato’s, a tapas bar in London. The chef there makes croquettes with a number of different flavorings; this version uses chicken. You will love the Chicken Croquettes Recipe.

Chicken Croquettes
Ingredients:
1 boneless chicken breast with skin, diced
2 tbsp butter
¼ cup plain flour
1 tbsp olive oil
1 garlic clove, finely chopped
150ml milk
1 small egg, beaten
1 cup fresh white breadcrumbs
Salt and black pepper
Oil for deep drying
Parsley sprigs to garnish
Lemon wedges, to serve
Chicken Croquettes
Preparation Method:
Liquefy the butter in a small pan. Add the plain flour and cook it gently, keep stirring, for 1 minute. Gradually beat in milk and make a smooth very thick sauce. Cover with a lid and remove from the pan from the heat.
Heat oil in a fryingpan and cook the chicken with the garlic for 5 minutes until chicken becomes lightly browned and cooked through.
Shift the cooked chicken from frying pan into a blender or food processor and process until finely chopped. Stir the chicken into the sauce and mix it well. Add salt and black oe white pepper as per the taste. Leave to cool completely.
Shape into 8 even size sausages then dip in the beaten egg and then breadcrumbs. Deep-fry in hot oil for 4 minutes until crisp and golden. Drain on kitchen paper and serve Chicken Croquettes garnished with parsley and lemon wedges.
