BBQ Potatoes with Mustard Sauce

Ingredients:

For Mustard Sauce

4 garlic cloves, crushed

2 tbsp lemon juice

2 egg yolks

1 cup olive oil

2 tsp wholegrain mustard

Salt and black pepper

For BBQ Potatoes

1 kg small new potatoes

200g shallots halved

2 tsp olive oil

1 tsp salt

BBQ Potatoes with Mustard Sauce

Preparation Method:

Prepare the barbecue, preheat the grill. To make the mustard sauce, place the garlic, lemon juice, egg yolks in a food processor and process for just a few seconds until the mixture is smooth.

Keep the food processor motor on and add the olive oil in a thin stream, until the mixture forms a thick glossy cream. Add the mustard and mix the ingredient together. Now add salt and black pepper. Chill until ready to use.

Par-boil the potatoes with their skins in the boiling water for 5 minutes. Drain well and then thread them on to metal skewers alternating with the shallots.

Brush the skewers with oil and sprinkle with salt. Barbecue or grill for about 10-12 minutes, turning occasionally. Serve with mustard sauce.
