Baked Meatball Minestrone Soup
Ingredients:
- Âľ tsp of oregano leaves
- ½ tsp of basil leaves
- 1 ½ lb 90% extra lean ground beef
- ÂĽ tsp of lemon peel
- ÂĽ tsp of ground black pepper
- Âľ cup of Bread crumb made with Italian style
- ÂĽ cup of chopped onion
- 1 egg
- Âľ cup of milk
- ÂĽ tsp of garlic powder
- 1 tsp of salt (coarse)
- 1 can or 19 ounces of home-style minestrone soup
- 2 tbsp of grated Parmesan cheese
- 1 can of refrigerated crescent rounds
- 1 tbsp of 100% Extra Virgin Olive Oil
- 2 cups of shredded Italian cheese blend (8 ounces)

Preparation Method
Preheat the oven to about 400o Inside a small bowl, mix basil, oregano, lemon peel, garlic powder as well as your black pepper. Keep about Âľ tsp of the mixture and keep it aside. Inside a large bowl, stir in your bread crumbs, ground beef, milk, onion, and the leftover seasoning, and stir till they are thoroughly mixed. Form the mixture into about 2-inch meatballs. Then pour your soup into a 13Ă—9-inch ungreased glass baking dish and top with your meatballs.
Bake the mixture till bubbly or for about 35 minutes.
In the meantime, combine your reserved Âľ tsp of seasoning mixture and the Parmesan cheese inside a small bowl. Unroll each of the crescent rounds to form a strip; put the stripe inside the foil. Bush the strips using olive oil, Sprinkle in abundance using Parmesan Cheese mixture.
Bring the baking dish out of the oven. Reduce the temperature of the oven to about 350o. Then sprinkle your Italian cheese together with the meatballs. Place your seasoned crescent strips on top of the cheese in a diagonal pattern. If necessary, cut to fit, but avoid crisscrossing your strips.
Bake for 20 – 24 minutes or till the cheese melts and your strips turn golden brown.
