Apricot Brulee
Ingredients:
125 g unsulphated dried apricots
4 egg yolks
150 ml orange juice
150 ml yogurt
½ cup sugar
1 tsp vanilla flavoring (extract)
Meringues, to serve (optional)
Apricot Brulee
Preparation Method:
Place the apricots and orange juice in a medium bowl and soak for over 1 hour. Pour into a small saucepan, bring slowly to a boil, and simmer for 20 minutes. Put the puree in a food processor or blender, or chop finely and push through a strainer (sieve).
Add egg yolks and sugar and beat together until the mixture is light and fluffy. Place the yogurt in a small pan, add the cream and vanilla and bring to the boil over a low heat.
Pour the yogurt mixture over the eggs, beating constantly, then transfer to the top of a double boiler or place the bowl over a pan of simmering water. Stir until the custard thickens.
Divide the apricot mixture between 6 ramekins and carefully pour in the custard. Cool, then chill in the refrigerator.
Heat the grill or a double boiler to high. Sprinkle the sugar evenly over the custard and grill until the sugar caramelizes. Set aside to cool.
To serve the Apricot Brulee Recipe | Apricot Dessert, crack the hard caramel topping with the back of a tablespoon.
